Dairy Free Chocolate Ice Cream

This ice cream recipe was inspired by vegan chocolate mousse recipes I’ve recently come across while looking for dairy free dessert ideas. I had some yolks to use and decided to make it to some ice cream, you could leave the yolks out and keep the recipe vegan, it will not be quite as creamy but would still be yummy served directly after churning.

Ingredients
  • 800 mililiters coconut cream brand without preservatives (2 cans)
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon liquid stevia
  • 1/4 teaspoon salt
  • 4 egg yolks
  • 100 grams dark chocolate 60 percent cacao dairy free, without added sugar

Instructions
  1. Place coconut cream, cocoa powder, vanilla, stevia and salt in a large mixing bowl and whisk on medium high speed for few minutes, until well combined and smooth.
  2. Place the whisked mixture in a sauce pan stir over medium heat for 5 minutes, then remove from heat.
  3. Whisk the egg yolks in a separate bowl, then add a scoopful of the hot coconut mixture continuously whisking to avoid getting any lumps.
  4. Combine mixtures continuously whisking and return on medium heat. Keep stirring until the mixture thickens.
  5. Strain the mixture to catch any possible lumps, then cover the bowl and refrigerate over night, minimum of 8 hours.
  6. Slowly pour the cold mixture in your ice cream machine and churn following the machine instructions.
  7. Chop the chocolate into small chunks and add in steps into the ice cream machine while churning. Continue churning for 15-30 minutes, until desired consistency.
  8. Serve directly or store in freezer until serving.
