Ingredients
  • 115 grams ground almonds
  • 100 grams dried cranberries sugar free
  • 1 egg
  • 70 grams unsalted butter softened
  • 1 tablespoon granulated stevia
  • 1 teaspoon vanilla extract

Instructions
  1. Preheat oven to 200 ºC (356ºF) and line a baking sheet with parchment paper.
  2. In a mixing bowl combine ground almonds, cranberries and stevia.
  3. In a separate bowl whisk the egg, then add to the almond mixture together with softened butter and vanilla extract and mix until incorporated.
  4. Drop dough by tablespoonfuls about 5 cm/ 2 inches apart.
  5. Bake in preheated oven for 12-15 minutes until lightly browned. Remove from baking sheet to wire rack and allow to cool before serving.
