Apple & Mascarpone Boston Cake

I really don’t know why it’s called Boston Cake and after a brief search failed to find some history online.

Anyway what I do know, is that in Scandinavia cinnamon buns baked in a cake tin are called Boston Cake or Bostoncake.

You bake it with as many buns as many people you want to serve, so everyone gets their own bun.

It’s often served with powdered sugar glaze or other type of glazing, but I did not want to cover the pretty peaking apple slices. 🙂

Ingredients
  • Dough
  • 250 mililiters water lukewarm
  • 20 grams yeast
  • 2 teaspoons crushed cardamom seeds
  • 1 egg
  • 600 grams plain flour
  • 70 grams unsalted butter softened
  • Filling
  • 250 grams mascarpone cheese
  • 5 small apples cut into slices
  • 2,5 teaspoons vanilla sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon soft brown sugar

Instructions
  1. In a mixing bowl dissolve the yeast in lukewarm water, then add cardamom, sugar and egg and whisk for a minute until incorporated.
  2. Add about half of the flour and mix using a wooden spoon until incorporated, then gradually add remaining flour.
  3. Add the melted butter and keep kneading until you got an elastic dough that comes off the surface you are kneading on, if it’s still sticky you may add some more flour.
  4. Cover the bowl and leave to risen in a warm place for about an hour.
  5. Preheat oven to 200°C, line a cake tin bottom with a baking paper and lightly grease the sides of the cake tin.
  6. Once the dough has risen, roll it out into a rectangular shape, approx 20×40 cm.
  7. Spread the mascarpone cheese on the dough and mix vanilla sugar and cinnamon.
  8. Sprinkle the cinnamon mix on top of the cheese, layer apple slices on top and sprinkle brown sugar on top.
  9. Roll from the long side and cut the roll into 8 pieces.
  10. Place one or two pieces in the middle of the cake tin and the rest around the center, forming flowery shape.
  11. Let them rise for few minutes before placing in the preheated oven. Bake for 45-60 minutes, until golden brown.
Recipe Notes

I ended up taking mine out the oven a bit too soon in 35 minutes, thus I increased the bake time here to 45 - 60 minutes. Best to test from the middle as sides bake faster.
