Ingredients
  • Filling
  • 1 onion chopped
  • 450 grams fresh asparagus cut into pieces
  • 230 grams fresh mushrooms sliced
  • 50 grams grated cheese
  • 4 eggs lightly beaten
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon italian herbs
  • 1/2 teaspoon sweet paprika
  • Crust
  • 100 grams unsalted butter
  • 50 grams Philadelphia cream cheese
  • 300 grams plain flour
  • 1/4 teaspoon salt
  • 3 tablespoons ice water

Instructions
  1. Prepare crust by mixing flour with butter and cream cheese, until smooth, then add salt and water and mix.
  2. Roll out on a lightly floured surface until it covers your pie dish all the way to the edges. Cover in cling film and refrigerate while preparing the filling.
  3. Preheat oven to 180ºC.
  4. In a large skillet sauté the onion, asparagus and mushrooms in butter.
  5. In a mixing bow combine eggs, seasoning and add cheese.
  6. Combine the mixtures.
  7. Pour over the crust and place additional asparagus pieces on top.
  8. Bake in preheated oven for 25-30 minutes, until golden brown on top. Serve warm.
