Baked Mango Puff Pastry Squares

Super simple, minimalistic yet delicious dessert with baked mango slices on puffy pastry bottom, served on it’s own or with some vanilla ice cream or whipped cream.

The cinnamony sweet mango slices look almost like a maple leaf in fall and I think it makes an excellent dessert enjoyed warm on a chilly evening in October (well, I can only imagine it would while I still wait for the summer to end in here).

I like to spend time baking and often take projects that take hours – enjoying every minute of it! But like for everyone of us, life gets busy at times and you have to adjust. While sometimes you may be forced to spend less time on doing things you enjoy the most, it’s important not to stop doing what you love.

I guess I’m trying to say that you may see more of these simple and quick baking recipes in the coming weeks and I do hope they will be doable for more of my readers than some of my other recipes may be.

Ingredients
  • 200 grams puff pastry thawed and cut into squares
  • 1 mango peeled and cut into slices
  • 1 tablespoon brown sugar
  • 3/4 teaspoon ground cinnamon

Instructions
  1. Preheat oven to 200ºC (400ºF) and prepare a baking sheet with parchment paper.
  2. Place the thawed puff pastry squares on the baking sheet and bake in preheated oven for 5 minutes.
  3. Meanwhile prepare mango slices and combine sugar and ground cinnamon.
  4. Remove the puff pastry squares from oven and place mango slices on top, sprinkle with the sugar mixture and return to oven, continuing to bake for 15-20 minutes until golden brown.
  5. Allow to cool a bit and enjoy, on it's own or with some vanilla ice cream or whipped cream.
