Butterscotch and banana to be more accurate, and that’s a wonderful smell to welcome your hubby who just returned from a 18K run! (He sure deserves a piece or two ūüėČ )

 

When it comes to over ripe bananas, my favourite thing to do with them has been chopping them up and freezing for use in smoothies but I’ve just come up with the second favourite which is a super easy pound cake! Pound cakes traditionally contains the same ration of the¬†4 main ingredients:¬†flour, butter, eggs and sugar. In this recipe I did however not use sugar but substituted it with the bananas and added butterscotch chips as the 5th main ingredient.Banana Butterscotch Pound Cake

It’s a super simple and versatile recipe using a 1:1:1:1:1 ratio by weight.¬†The banana gives the cake aromatic flavour, moisture and little sweetness that pairs wonderfully with butterscotch chips as well as other flavours such as¬†peanut butter chips or chocolate chips.¬†Banana Butterscotch Pound Cake

Ingredients
  • 180 grams ripe bananas
  • 180 grams eggs about 3 large, at room temperature
  • 1 teaspoon vanilla extract
  • 180 grams unsalted butter softened and whipped
  • 180 grams cake flour sifted
  • 180 grams butterscotch chips

Instructions
  1. Preheat oven to 170¬ļC (340¬ļF) and grease and line a 25 cm (10 inch) loaf cake pan with parchment paper.
  2. Place mashed bananas in mixing bowl with eggs and vanilla and start beating on high speed, beating until pale and fluffy.
  3. While continuing to beat on medium speed gradually add the soft whipped butter until all incorporated.
  4. Remove from mixer and add sifted flour folding it in by using a spatula.
  5. Once smooth fold in the butterscotch chips, then pour into the prepared cake pan.
  6. Bake in preheated oven for 35-40 minutes until nicely browned and until a toothpick inserted in middle comes out clean.
  7. Remove from cake pan and lift onto wire rack allowing to cool down a bit before cutting into slices and serving.
