I belong to the second group and normally avoid this earthy red vegetable. This year I’ve made couple of exceptions in that 1) Cleansing juice – Beets are great in juices because they are packed with potassium, magnesium, fibre, iron and so much more and 2) Red Velvet – boiled beetroot naturally enhance the colour and retain moisture. Beet Red Velvet Brownie Gifts

I actually made these brownies last weekend and I was meant to share the recipe earlier but our little princess Peach suddenly got a spinal disk herniation (yes unfortunately, dogs can get it too) and we’ve been busy giving her extra attention amongst all other things that’s been keeping us busy lately.

Ingredients
  • Beet Red Velvet Brownies
  • 250 grams beetroot cooked
  • 230 grams sugar
  • 150 grams unsalted butter
  • 3 eggs
  • 100 grams plain flour
  • 100 grams dark chocolate
  • 3 tablespoons sour cream
  • 2 tablespoons cocoa powder
  • 2 teaspoons vanilla extract
  • Cream Cheese Frosting & Bows
  • 30 grams unsalted butter
  • 70 grams Philadelphia cream cheese
  • 100 grams powdered sugar
  • 1 teaspoons vanilla extract
  • 15-30 star shaped sugar sprinkles

Instructions
  1. Preheated oven to 180°C (356°F) and prepare a rectangular baking dish with parchment paper.
  2. Place the beetroot, 1 egg and sour cream in food processor and pulse until smooth.
  3. Beat the remaining eggs and vanilla extract in a separate bowl.
  4. Place sugar, butter and dark chocolate in a sauce pan over medium heat continuously stirring until melted and smooth.
  5. Combine flour and cocoa, then combine all three mixtures folding and gently mixing with a spatula.
  6. Pour into prepared baking dish and bake in preheated oven for 30 minutes or until a toothpick inserted in middle comes out clean.
  7. Allow to cool complete before cutting into square/rectangular pieces.
  8. Combine frosting ingredients in mixing bowl and beat until smooth. Place in a piping bag with small round piping tip.
  9. Pipe into shape of a cross on top and sides of the brownies and a knot on the top, then place a star sprinkle on top.
