Whipped cream and sugar sprinkles are simply the fastest way to decorate a cake. It may not look as impressive as a fondant covered cake, but let me assure you that it’s tasty and what’s better than fresh whipped cream with berries?

I had so much fun baking this kitty cake and it made me think about where this all began…

My interest in baking started early. I was mastering the use of a rolling pin before my first birthday. 🙂

Ingredients
  • Cake
  • 200 grams unsalted butter
  • 200 grams sugar
  • 200 grams self rising flour
  • 50 grams plain flour
  • 1 teaspoon baking powder
  • 5 eggs
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 50 grams frozen red currants
  • 100 grams frozen blueberries
  • 100 grams frozen raspberries
  • Topping
  • 200 mililiters whipped cream
  • 2 tablespoons chocolate sprinkles
  • 1 tablespoon yellow sugar sprinkles
  • 3 tablespoons pink sugar sprinkles

Instructions
  1. Preheat oven to 180ºC.
  2. In a mixing bowl beat butter and sugar for few minutes in medium high speed.
  3. Add eggs one at time and continue beating.
  4. In a separate bowl combine flours and baking powder, set spoonful aside for berries.
  5. Add dry ingredients and milk and vanilla and mix until incorporated.
  6. Mix the frozen berries and spoonful of flour.
  7. Add in to the batter by gently folding in.
  8. Spoon into the cake mould and bake in preheated oven for about 40 minutes.
  9. Allow to cool down completely before removing from the mould.
  10. Pipe whipped cream first over the eyes, nose and bow. Then cover eyes with chocolate sprinkles, nose with yellow and bow with pink sugar sprinkles.
  11. Cover rest of the kitty with whipped cream. If your kitty mould is full bodied, use remaining pink sprinkles for the dress.
