Blackberry Chocolate Chip Waffles

Golden crisp waffles with flavourful fresh blackberries and mini dark chocolate chips. Perfect for a weekend breakfast or brunch served with fruit and cream. And those gorgeous fresh blackberries – we’ve picked them ourselves! We’ve been to a PYO (pick your own) harvest farm yesterday. Spending half day picking cherry tomatoes, cucumbers, strawberries, blackberries, zucchini flowers, carrots, spinach, parsley, mint, and eating straight from the field – was truly an amazing experience and I believe a start of a new weekend activity for us. The produce on the farm was so tasty that the “little” tasting here and there was our lunch for the day.

Beautiful fruit and berries are a great inspiration for the kitchen, though we prefer eating them fresh, what better than pairing them with some golden crispiness. With these waffles you got a little both, with blackberries in the crunchy waffles together with chocolate chips that you cannot detect from outside as they are hidden in the batter and burst in flavour as you bite it – giving it an element of surprise. šŸ˜€

Topped with lightly vanilla flavoured whipped cream and fresh fruit, it hardly misses anything – however if you like to add sweetness, you can always pour some maple syrup on, after all that sweet goodness is a waffle’s best friend! Happy weekend, friends!

Ingredients
  • 1 egg
  • 200 grams plain flour
  • 35 mililiters vegetable oil
  • 180 grams soda water
  • 50 mililiters milk
  • 3/4 tablespoon sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 50 grams fresh blackberries
  • 35 grams mini chocolate chips

Instructions
  1. In a mixing bowl combine egg, flour, soda water, milk, sugar, baking powder, vanilla and salt. Whisk until smooth.
  2. Fold fresh blackberries and chocolate chips in the batter.
  3. Spoon the batter into a preheated waffle iron.
  4. Cook the waffles until golden and crisp, place on wire rack to avoid them becoming soggy.
  5. Serve immediately.
Recipe Notes

Preparing in advance:

  • leave blackberries and chocolate chips to be added only before cooking.
  • keep the batterĀ refrigeratedĀ and take to room temperature 1 hour prior to cooking.
