This is a quick post about a equally quick treat – berrylicious blonde brownies! It takes less than 10 minutes to whip up the batter and toss in frozen berries coated in potato flour that helps them to stay on top and somewhat intact.
You can enjoy the brownies straight from the oven served with vanilla ice cream or allow to cool a bit, plate and dust little icing sugar on top and serve with vanilla flavoured whipped cream. Or simply enjoy them on their own, they are totally berrylicious, cakey bite from the top and gooey from the middle (if you want them more dense, simply leave them in the oven until desired consistency).
Notice that the recipe is for a fairly small quantity – I was alone at home and played safe to ensure I wouldn’t eat a large tray of brownies! They did turn out super yummy and I might just have done a bit too much of tasting before lunch… 😀
