Caramelised Vanilla Custard

Caramelised vanilla custard served with fresh strawberries makes an excellent dessert. It’s easy to make, consists of only four ingredients and does not require any special equipment.

A dessert whipped up from basic ingredients makes a great conclusion to any evening meal. I rarely make desserts on a typical weekday but sometimes it’s fun to skip dinner and have dessert instead. 😀

Ingredients
  • Caramel
  • 60 grams sugar
  • Vanilla Custard
  • 2 eggs
  • 1 egg yolk
  • 1/2 teaspoon vanilla seeds
  • 50 grams sugar
  • 250 mililiters milk

Instructions
  1. Preheat oven to 160ºC and prepare two ramekins, you'll also need a deep oven dish.
  2. Place sugar in a heavy sauce pan and melt over medium high heat.
  3. Cook the sugar stirring with a wooden spoon until golden, remove from heat.
  4. Divide the caramel into 2 ramekins.
  5. In a mixing bowl lightly beat the eggs and yolk, only to mix not to become fluffy.
  6. Add sugar and whisk until dissolved, then add vanilla and milk and combine using a hand blender.
  7. Strain through a sieve to discard any possible lumps.
  8. Spoon over the caramel and place filled ramekins into oven dish and pour water into the dish filling approximately 1 cm up the sides of the ramekins. Bake in preheated oven for 1 hour or until the custard sets.
  9. Allow to cool and run a small spatula or a knife around.
  10. Carefully turn around on a plate - the caramel will run out.
  11. Serve warm or chilled, on it's own or with fruits.
Recipe Notes

Don't worry if the caramel hardens - it will melt again in the oven.
