Cherry Marshmallows

So Happy to share my first marshmallow recipe, never thought making tasty candy would be this easy!

Many recipes call for corn starch, I used only powdered sugar in coating and did not stress too much on coating the sides, which did leave them slightly sticky at first but after allowing them to sit for a while they aren’t sticky anymore.

Though I literally used only a drop of cherry candy flavouring, the flavour is quite strong and I’m glad I used vanilla to enhance the strong cherry essence.

These gooey pink goodies are ready for roasting, s’mores, hot cocoa topping and any other way you like to have your marshmallows, easy and yummy!

Ingredients
  • 24 grams pure gelatin powder
  • 230 mililiters water divided
  • 340 grams sugar
  • 200 mililiters light corn syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon cherry candy flavouring
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon pink food coloring
  • 50 grams powdered sugar divided
  • nonstick spray

Instructions
  1. Measure all ingredients, dividing water into 120 ml cold and 110 ml in room temperature. You will also need a heavy bottom sauce pan, square/rectangular baking pan, sifter, spatula, a mixing bowl and a flat beater.
  2. Prepare a square/rectangular baking pan by lightly spraying with nonstick spray, then place a parchment paper or aluminium foil in the bottom and coat with sifted powdered sugar.
  3. Pour cold water into a mixing bowl and sprinkle gelatin powder on top and leave to absorb.
  4. Place water, sugar, corn syrup and salt in saucepan and bring to boil over medium high temperature.
  5. Once the mixture starts boiling, stir and let it boil for 2 minutes.
  6. Start mixing mixing the gelatin on low speed and slowly pour the boiling sugar syrup in.
  7. Gradually increase the mixing speed to high and beat for approximately 10 minutes until thick, white and glossy. Add vanilla and cherry flavouring and continue beating.
  8. While beating and add drop of pink coloring.
  9. Continue beating until dyed evenly.
  10. Pour onto your baking pan, and spread evenly using a lightly oiled spatula to prevent sticking.
  11. Sprinkle with powdered sugar and refrigerate for minimum of 8 hours.
  12. Using washed kitchen scissors cut the marshmallows into cubes.
  13. Lightly dust with powdered sugar and serve. Store in airtight container.
