Chocolate Cake & Strawberries

Chocolate and strawberries = a match made delicious in my kitchen on a busy weekend before holidays.

That busy that I even forgot to measure how much of strawberries made it to the top, luckily the picture gives an idea. 🙂

Ingredients
  • 120 grams dark chocolate 60 percent cacao melted
  • 90 grams unsalted butter softened
  • 175 grams soft brown sugar
  • 2 eggs separated
  • 190 grams plain flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 230 mililiters milk
  • 1 teaspoon vanilla 1
  • 1 tablespoon cocoa powder
  • Chocolate Buttercream Icing
  • 90 grams dark chocolate 60 percent cacao melted
  • 110 grams unslated butter softened
  • 120 grams powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla

Instructions
  1. Preheat oven to 175ºC , lightly grease a 20cm cake tin and coat it with cocoa powder.
  2. Place butter and brown sugar in a mixing bowl and beat on medium high speed for about 5 minutes, until pale and creamy.
  3. Add the egg yolks and melted chocolate and beat for 3 minutes. In a separate bowl combine the flour, baking powder, baking soda and salt. In a cup or a jar combine vanilla and milk.
  4. Add the flour and milk into the chocolate mixture in two steps beating on medium speed until fully incorporated. In a separate mixing bowl beat the egg whites for about 3 minutes until soft peaks form.
  5. Using a spatula fold the egg whites slowly into the batter, to keep it airy try not to mix too mix.
  6. Pour the batter in your cake tin and bake for 30-35 minutes until a toothpick inserted from the middle comes out clean.
  7. Let the cake cool down before frosting.
  8. Prepare the butter cream chocolate frosting by placing all the ingredients in a mixing bowl and beating with gradually increased speed and mix until fully incorporated.
  9. Coat the cake with frosting
  10. Add washed and hulled strawberries on top
Recipe Notes

You can dip the strawberries in the excess chocolate left in the dish you had it melted in. Here I added some crunchy chocolate balls as well.
