Chocolate Orange Cupcakes

Hello Sunshine! Tangy orange and rich dark chocolate is the irresistible duo in these fast made cupcakes I made in less than an hour for a dessert to bbq at friends house last weekend.

I did not have time to wait for the cakes to cool completely before frosting, resulting in the frosting melting a bit, nevertheless they came out delicious!

The dark chocolate I used in this recipe is an unsweetened 60% cacao and kind of bittersweet flavour, but you can use any chocolate you prefer. Orange flavour works well with milk chocolate and white chocolate too.

Ingredients
  • Cupcakes
  • 50 grams dark chocolate chopped
  • 50 grams unsalted butter cut into small cubes
  • 60 grams dark brown sugar
  • 2 eggs
  • 85 grams plain flour
  • 1/2 teaspoon baking powder
  • 1/3 teaspoon baking soda
  • 1/4 teaspoon salt
  • 100 mililiters milk
  • 1 teaspoon orange zest grated
  • 1 tablespoon orange juice
  • Frosting
  • 50 grams unsalted butter at room temperature
  • 2 tablespoons dark chocolate ganache
  • 100 grams powdered sugar
  • 1 tablespoon orange juice
  • for topping
  • 1/3 Orange cut into small pieces
  • 30 grams dark chocolate chopped into chunks

Instructions
  1. Preheat oven to 180°C and prepare muffin pan with 6 cupcake cases.
  2. Place the butter and sugar in a mixing bowl and start beating on medium speed, until smooth.
  3. Add eggs one at time and continue beating for few minutes.
  4. In a separate bowl combine flour, baking powder, baking soda and salt.
  5. Combine milk, orange juice and zest.
  6. Add the dry ingredients and orange milk in the egg mixture and beat on high speed just until incorporated.
  7. Add the chopped chocolate by folding by using a spatula.
  8. Pour into cupcake cases filling 2/3 of the case.
  9. Bake in preheated oven for 25 minutes until a toothpick inserted in the middle comes out clean.
  10. Let the cupcakes cool on a wire rack.
  11. Once cooled prepare frosting, starting by mixing the butter and ganache with tablespoon of powdered sugar.
  12. Beat until smooth then add orange juice and remaining powdered sugar and continue beating until smooth.
  13. Pipe over cooled cupcakes and top with piece of orange and chocolate chunk.
