Chocolate Peanut Butter Chip Brownies

It’s been a while since my last post, and the recipe I’m about to share is not quite new. I’ve made these brownies numerous times – even made a gluten free version for my sister couple weeks ago, using buckwheat flour. The reason why I haven’t shared the recipe before is simply that they are usually long gone by the time I get my camera ready.

This time I made effort to capture some in pictures so I could share this delicious gooey chocolate brownie recipe with yummy Reese’s Peanut Butter Chips. You can easily turn it into all chocolatey brownies by using white or dark chocolate chips instead. It’s also easier to make it for bigger crowd by doubling quantities and baking in several trays!

This is the perfect dessert to make when you don’t have much time – you can mix the ingredients together in less than 10 minutes, pop it in the oven and let it bake while you prepare your meal or get ready to go out and half an hour later you got a warm dessert to serve or take out with you.Chocolate Peanut Butter Chip Brownies

Ingredients
  • 200 grams dark chocolate
  • 4 eggs
  • 125 grams unsalted butter
  • 120 grams peanut butter chips
  • 150 grams soft brown sugar
  • 100 grams sugar
  • 120 grams plain flour sifted
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Instructions
  1. Preheat oven to 160°C and line a baking tray with parchment paper.
  2. Measure all ingredients placing chocolate, butter and sugar in a sauce pan.
  3. Place sauce pan over medium heat stirring constantly until melted, then remove from heat and stir in eggs.
  4. Sieve in flour and add vanilla and salt and mix well.
  5. Fold 2/3 of the peanut butter chips in the batter and mix gently.
  6. Pour into prepared baking dish and sprinkle remaining peanut butter chips on top.
  7. Bake in preheated oven for 35 minutes or until set to desired consistency. Cut into squares/rectangular pieces and serve hot or cooled.
