Chocolate peanut butter chip cookiesCookies cookies, not my typical thing to bake and it took a few versions until I was happy with these Chocolate Peanut Butter Chip Cookies. Nevertheless the results are worth it! These cookies are soft, chunky and chocolaty – perfect snack or treat on their own with a glass of milk or sandwiched and filled with peanut butter! Or with ice cream – who wouldn’t love a chocolate peanut butter ice cream sandwich?!

Apart from being delicious, quick to make and easily adjustable, what I absolutely love about cookies is the smell that takes over the whole house when you bake a batch or two, it’s just divine!! Chocolate peanut butter chip cookiesTo take the most fun out of any baking session, I like to use few minutes to prep the ingredients, measuring and plating them ready to use. This way I maximize my working area by not having anything unnecessary – containers or bags on the counter. And I admit, I like to take these ‘before’ pictures of the stuff I bake. 🙂

Ingredients
  • 55 grams unsalted butter softened
  • 85 grams sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 75 grams plain flour
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 75 grams peanut butter chips
  • 25 grams chocolate chips

Instructions
  1. Preheat oven to 175ºC (347ºF).
  2. In a mixing bowl beat butter and sugar until smooth.
  3. Add egg and vanilla and continue to beat over medium speed.
  4. In a separate bowl combine flour, cocoa powder, baking powder, baking soda and salt.
  5. Add the flour mixture into creamed mixture continue to beat until just incorporated.
  6. Remove from mixer and fold peanut butter and chocolate chips in by using a spatula.
  7. Drop teaspoon full portions onto cookie sheet and bake in preheated oven for 8-9 minutes.
  8. Lift onto wire rack and allow to cool before serving.
