And sprinkles, of course! These doughnuts are light and airy Choux pastry with sweet white chocolate glaze in pink and colourful sugar sprinkles. They are fun treats and much lighter than traditional yeast doughnuts, and surely they aren’t fried but oven baked!

The light Choux pastry itself has a very mild taste and topping is what gives this treat it’s sweetness. Sure you could cut the rings open and pipe in filling of your choice. I left mine unfilled as I wanted them to be as much doughnut like as possible, plus they are small and you do not get a feeling of something missing when you bite in.

You won’t believe (unless you’ve already seen it in Instagram) the inspiration for these cute little treats actually came from my new shoes!! 😀 I’ve gone all sprinkles for the Pink Jimmy Sprinkle Flats by Shoebaker, they are just such a work of art! For now these leather dreams are my fancy baking shoes, but I can’t wait to show them off on the streets of Tel Aviv!

Ingredients
  • Choux Pastry rings
  • 60 mililiters water
  • 25 grams unsalted butter
  • 1/6 teaspoon salt
  • 1/2 teaspoon sugar
  • 35 grams plain flour sifted
  • 1 egg large or 2 small eggs
  • Topping
  • 65 grams white chocolate
  • 1/4 teaspoon pink chocolate colouring gel or pink candy colouring gel
  • 2 tablespoons sugar sprinkles

Instructions
  1. Preheat oven to 180 ºC (356ºF) and prepare a baking sheet with a parchment paper. To make marks for rounds you can either draw them on the other side of the parchment paper, or simply spray some oil on the paper, dust with flour and make marks on it using a large round cookie cutter.
  2. In a small sauce pan heat water, butter, salt and sugar over medium heat until the butter melts.
  3. Remove from heat and whisk in the flour.
  4. Finally whisk in the egg and continue whisking until it's smooth and falls of the whisk.
  5. Place in a piping bag with large round piping tip (I use Wilton 2A) and pipe onto the prepared marks over the baking sheet.
  6. Bake in preheated oven for 15-20 minutes, until nicely browned. Lift onto a wire rack and allow to cool.
  7. Melt the white chocolate in a double boiler or in microwave in short intervals. Be careful not to over heat the chocolate, it should be shiny and runny when melted. Add chocolate colouring gel a drop at time until you get the desired pink hue.
  8. Spoon the chocolate over the cooled choux pastry rings and add sprinkles on top.
  9. Wait until the chocolate dries, then serve and enjoy!
