Cocoa Pebbles Cookies

While I find making perfect chocolate chip cookies very challenging, this cookie recipe with cocoa pebbles (chocolate flavoured crisp rice cereal bits) came out absolutely cookielicious! 

We rarely have cereal at home and I think this might be the first time we have sugar coated cereal, which I bought particularly for cookie making purposes.

During our recent trip two of the hotels we stayed in provided homemade cookies and we got to taste several different types of cookies with cereal and coconut. That’s from where I got the idea but instead of crunchy crumbling cookies I aimed for a more chocolate chip type of a soft and chewy cookie.

If I told you the jar is almost empty after one day, needles to say I’ll be making more of these soon. 🙂

Ingredients
  • 175 grams unsalted butter softened
  • 100 grams sugar
  • 100 grams dark brown sugar
  • 250 grams plain flour
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 40 grams cocoa pebbles cereals

Instructions
  1. Preheat oven to 175ºC and prepare two baking sheets with baking paper.
  2. Place sugars and butter in a mixing bowl and start beating on medium high speed, continue beating until light and fluffy.
  3. Meanwhile in a separate bowl combine flour and baking soda and set aside.
  4. Add eggs, salt and vanilla to the butter-sugar mixture and continue beating for two minutes.
  5. Turn beating on low speed and add the flour mixture, mixing until just combined.
  6. Remove from the mixer and add the cocoa pebbles.
  7. Gently stir the cereal in by using a spatula.
  8. Drop in tablespoon sized balls onto baking sheet approximately 5 cm apart. Bake in preheated oven for 10-12 minutes, until golden brown around the edges but still soft in the middle.
  9. Wait a minute or two after removing from the oven and then place on wire rack to cool completely.
