Coconut & Pineapple Ice Cream

For us, the ice cream machine has been one of those kitchen appliances that you think you’ll use all the time, but after first couple tries, it’s hardly ever used and is just taking up your closet space.

Time to change that and what better than stepping homemade ice cream a level up using the secret ingredient of smooth and creamy ice cream. And guess what?

It’s egg yolks!

I’m super excited to share my first ice cream recipe using egg yolks, this one is also a sugar free ice cream sweetened with liquid stevia, it could be made fully dairy free by substituting heavy cream with coconut milk.

Ingredients
  • 800 mililiters coconut cream brand without preservatives (2 cans)
  • 150 mililiters heavy cream
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon liquid stevia
  • 1/8 teaspoon salt
  • 6 egg yolks
  • 220 grams pineapple cut into small chunks
  • 2 tablespoons coconut flakes

Instructions
  1. In a saucepan combine coconut cream, vanilla, heavy cream, stevia and salt, stir over medium heat for 5 minutes, then remove from heat.
  2. Whisk the egg yolks in a separate bowl, then add 1/3 to the hot cream mixture while whisking to avoid getting any lumps.
  3. Add the remaining egg yolks and return on medium heat, keep stirring until the mixture thickens.
  4. Strain the mixture to catch any possible lumps, then cover the bowl and refrigerate for minimum of 5 hours.
  5. Slowly pour the cold mixture in your ice cream machine and churn following the machine instructions.
  6. Mix pineapple chunks with coconut flakes and add in steps the the ice cream machine while churning.
  7. Continue churning for 15-30 minutes, until desired consistency.
  8. Serve directly or store in freezer until serving.
