“C is for cookie and cookie is for me” Cookie Monster.
Featuring the mini chocolate chip cookies I shared yesterday, here’s my version of the blue cookie loving monster. As it’s hard to get dark hue on macaron shells I did not achieve the navy blue look but they turned pretty adorable anyway.
These fellows are filled with Nutella, but any ganache will work too. Here’s a little video of the assembling, hope you’ll like it. 🙂
Ingredients
- Macaron shells
- 86 grams egg whites divided
- 100 grams granulated sugar
- 25 mililiters water
- 100 grams powdered sugar
- 90 grams ground almonds
- 1/2 teaspoon blue food coloring
- Filling & decorations
- 120 grams Nutella hazelnut spread
- 25 mini chocolate chip cookies
- 50 candy eyeballs
- blue ready made icing
- blue sugar sprinkles

Instructions
- Preheat oven to 160ºC , prepare 2 baking sheets with baking paper or silicone baking sheets.
- Place half of the egg whites in mixing bowl and start mixing on medium high speed.
- Place the granulated sugar and water in a pot and put it on the stove on medium heat, once it starts boiling let boil for a minute and remove from heat.
- Slowly pour the sugar syrup to the egg white foam while continuing to beat on high speed.
- Continue beating for about 5 minutes, until you get stiff and glossy peaks.
- Meanwhile in a separate bowl mix almonds and powdered sugar until fully incorporated, then add remaining egg whites and blue food colouring.
- Combine the mixtures by gently folding with a metal spoon or spatula.
- Place in a baking bag and pipe onto baking sheet.
- Tap the baking sheet few times to get rid of possible air bubbles and bake in preheated oven for 15-17 minutes and leave to cool down.
- Prepare decorations and place Nutella in a piping bag.
- Spread a drop of blue icing on top of a shell, position the eyeballs next to each other, sprinkle blue sugar on top then pipe filling on the flat side of the second shell and place a cookie on top, then add a bit more of Nutella on top of the cookie and put top shell in place to make into a sandwich.
