Churn churn and we got a winner! Cookies and Cream is my new favourite homemade ice cream, it’s creamy and cookielicious. It’s also easily scoopable after freezing, our freezer tends to make all ice cream even store bought hard as ice but this one just needed a couple minutes on the counter and it was perfectly scoopable.

Cookies & Cream Ice Cream

Scoop into ice cream cones and top with half of an Oreo cookie for the ultimate ice cream and cookie treat.

Ingredients
  • 5 egg yolks
  • 80 grams sugar
  • 300 mililiters milk
  • 500 mililiters cream
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon vanilla bean seeds
  • 3/4 teaspoon salt
  • 10 Oreo cookies crushed

Instructions
  1. Place milk, sugar and salt in saucepan over medium heat.
  2. In a separate bowl whisk egg yolks and add 1/3 of the hot milk mixture whisking continuously.
  3. Combine with remaining hot liquid and return to heat constantly stirring. Remove before the mixture starts to boil.
  4. Chill in refrigerator for 1 hour.
  5. Add cream and vanilla and mix into the chilled mixture.
  6. Start to churn and pour the mixture into ice cream machine, add about half of the crushed cookies gradually while churning.
  7. Churn for about 15 minutes, until desired texture and mix remaining crushed cookies in.
  8. Serve right away or pour into loaf pan or freezer safe plastic box and freeze until serving.
