A quick post before I’m off to catch a flight to Rome for a little getaway with my husband! There’s going to be a lot of eating on this trip (I love Italian food!!!) and we’ll take a closer look on Italian cooking too which I will write more about when we are back, but now to these divine little coconut bites…
A few weeks back I shared this visual presentation of the difference between macaron and macaroon, which explains the difference with theses cookies that are easily mixed by their names but not by their appearance. Coconut macaroons often contain condensed milk and their appearance is much like the texture lumpy and crumbly.
These coconut macaroon bites are a bit different variation in their look and the technique used. They do not require a mixer and the egg whites are mixed in with sugar and shredded coconut and the mixture is heated over simmering water while constantly stirring until the mixture comes together. There is a bit of fruit baby food that adds moisture in the mixture but does not affect the flavour so you may use any fruit/combination.
As we approach the holidays, it’s good to note that these bites make a great edible gift. Who wouldn’t want some coconutty cute cookie bites wrapped in gift box or clear treat bag with a ribbon? Look how cute this Christmas reindeer sock looks while holding a bag of goodies 🙂 .
