Coconut Macaroon Bites

A quick post before I’m off to catch a flight to Rome for a little getaway with my husband! There’s going to be a lot of eating on this trip (I love Italian food!!!) and we’ll take a closer look on Italian cooking too which I will write more about when we are back, but now to these divine little coconut bites…

A few weeks back I shared this visual presentation of the difference between macaron and macaroon, which explains the difference with theses cookies that are easily mixed by their names but not by their appearance. Coconut macaroons often contain condensed milk and their appearance is much like the texture lumpy and crumbly.

These coconut macaroon bites are a bit different variation in their look and the technique used. They do not require a mixer and the egg whites are mixed in with sugar and shredded coconut and the mixture is heated over simmering water while constantly stirring until the mixture comes together. There is a bit of fruit baby food that adds moisture in the mixture but does not affect the flavour so you may use any fruit/combination.

Ingredients
  • 100 grams shredded coconut
  • 95 grams sugar
  • 42 grams egg whites
  • 2 tablespoons mango-banana baby food or apple sauce
  • 50 grams dark chocolate melted
  • 1 tablespoon powdered sugar

Instructions
  1. Preheat oven 220°C (425°F) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl combine sugar and coconut.
  3. Add egg whites and baby food/apple sauce and mix with a spatula.
  4. Fill a saucepan with 2.5 cm (1inch) water and heat till barely simmering, then place the mixing bowl over the simmering water and continue stirring over the heat for about 8 minutes until the mixture comes together.
  5. Place into a piping bag and pipe small mounds on a prepared baking sheet.
  6. Wet your hands and shape the mounds into balls then lengthen one side to make a little tip.
  7. Bake in preheated oven for 4 minutes, then rotate the baking sheet to ensure they are evenly coloured. Bake until lightly browned.
  8. Place the melted chocolate into a piping bag and pipe small rounds on a parchment paper or silicone baking sheet.
  9. Place coconut macaroons on their chocolate feet and leave to dry.
  10. Dust with cocoa powder and serve.
