Frozen Yogurt Fruit Bomb

Sugar free fresh dessert can hardly get any better than this!

If you’ve followed me for some months now, you’ve seen I finally got around using our ice cream machine in the last quarter of 2014, when I made some low carb sugar free ice creams. Funny enough I again got the machine down from the closet to make some sugar free dessert, this time with three of my favourite fruits; Passion fruit, Dragon Fruit and Strawberries.

Strawberries give the frozen yogurt a beautiful pink hue and sweetness, passion fruit some tartness and dragon fruit adds to the sweetness with it’s crunchy bits.

Don’t you just love the combination of the colours and flavours of these fruits?

Now imagine them mixed in frozen yogurt, that’s a Frozen Fruit Bomb, isn’t it?

Ingredients
  • 750 mililiters plain yogurt
  • 3 passion fruits pulp and seeds
  • 1 dragonfruit/ Pitaya
  • 6 big strawberries

Instructions
  1. Cut passion fruits into halves and set aside.
  2. Cut the dragon fruit into halves, separate the flesh from the skin using a tablespoon then cut into small pieces.
  3. Clean the strawberries and cut into small pieces and set aside.
  4. Place half of the cold yogurt in ice cream machine and start churning.
  5. Add half of the fruits, taking passion fruit pulp and seeds using a spoon and continue churning.
  6. Add remaining yogurt and fruits gradually while continuing churning. Continue churning for 15-30 minutes, until desired consistency.
  7. Scoop out from the ice cream machine and place into freezer safe dessert bowls or a container.
  8. Freeze for 2 hours and serve.
