I recently got a suggestion to try baking with fruit puree baby food instead of butter. While I love baking with butter, I’m always open for suggestions and trying new things.

Moreover, to continue my month of “no added sugar” this is a wonderful way to health up some cakes!

You just have to let these pretties to cool down before biting in, they are much tastier cold! I wanted to taste the pear and left them quite plain, but you can easily spice them up with some cinnamon and nutmeg.

Ingredients
  • 2 pears diced into small cubes
  • 190 grams apple & peach puree baby food without added sugar
  • 100 grams plain flour
  • 50 grams whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon honey
  • 2 eggs
  • 50 mililiters skim milk
  • 1 teaspoon vanilla extract

Instructions
  1. Preheat oven to 180°C and line 12-hole muffin tray with muffins cases or a baking tray with silicone cases.
  2. In a mixing bowl beat eggs until pale and fluffy, the add the puree.
  3. In a separate bowl mix the flours and baking powder. ( For spicier version add cinnamon & ground nutmeg)
  4. Combine milk and vanilla then add to egg mixture and continue beating for a minute, then add the flour mixture.
  5. Finally add the pear cubes by folding using a spatula, then spoon into muffin cases.
  6. Bake in preheated oven for 20-25 minutes, then allow to cool on a wire rack.
