Hope you aren’t exhausted of heart themed baking, as I got one more for you 😮 .This isn’t a sweet one though and it uses a store bought pastry dough with only a couple other ingredients. Certainly you can make into any other shape – I just recently got a heart shaped pastry press and had to give this a try. If you make them without a pastry press, make sure to seal the ends well, at least 1 cm (0.39 inch) from the edges as they do rise quite a bit in the oven.

This is soft type of bourekas with puff pastry, you could make it into the more delicate bourekas by using filo pastry instead. Salty feta cheese goes very well with tomatoes and is an excellent choice to pair with red pesto. I used pesto that’s made from cherry tomatoes, basil, olive oil and garlic and two tablespoons was just enough to give the feta more flavour and colour without it becoming too powerful. Store bought pesto flavour can be strong, I recommend you add it in smaller portions and taste the mixture after each addition – you want to be able to taste both feta and the pesto.

Ready pastries can be eaten hot or cold. We like to re-warm them in the oven and serve with crushed fresh tomatoes with a little bit garlic and tiny bit of salt. How do you like your bourekas? If you decide to try this recipe, please let us know how it goes! -♥♥♥-

Ingredients
  • 800 grams puff pastry sheet thawed
  • 200 grams feta cheese
  • 2 tablespoons cherry tomato pesto /red pesto
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons roasted black sesame seeds
  • 2-3 tablespoons flour to flour the work surface

Instructions
  1. Preheat oven to 180ºC (356 ºF) and prepare a baking sheet with parchment paper.
  2. Place egg and water in small bowl and whisk by using a fork. Besides the ingredients, you'll also need a heart shaped pastry press and a heart shaped cookie cutter size of the press or slightly smaller.
  3. Crumble the feta in a small mixing bowl and add the red pesto and mix until incorporated.
  4. Turn the thawed puff pastry onto a lightly floured surface and cut hearts by using a cookie cutter. Place two pieces on the pastry press, fill with feta mixture and brush the ends of the other piece with egg wash, then close and press.
  5. Open the press and transfer onto baking sheet. If the pastry sticks give it a tap on the other side and if needed help it come of with use of a toothpick. You can add more flour on the press side to avoid sticking.
  6. Repeat until you've used all the pastry dough.
  7. Brush with egg wash and sprinkle black sesame seeds on top.
  8. Bake in preheated oven for 30-35 minutes until golden brown.
