Ice Cream Sandwich Cake Israel Flag
Israel has just celebrated it’s 66th Independence Day, Yom Ha’atzmaut. I wanted to make something special for the occasion and since I’ve wanted to make The Star of David from cookie dough for a while now, I decided to make it in my first ice cream sandwich cake, filled with store bought Israeli vanilla ice cream.

Ingredients
  • Giant Flag Cookies
  • 125 grams unsalted butter
  • 100 grams sugar
  • 1 egg
  • 300 grams plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon blue food colouring
  • Filling
  • 1,5 liter Vanilla ice cream

Instructions
  1. Preheat oven to 200ºC, prepare a baking sheet with baking paper and take another baking paper, fold it twice and in the middle of the square draw a star of David silhouette in width of approximately 1 cm and cut it out.
  2. In a mixing bowl whisk butter and sugar for 5 minutes then add the egg and continue beating for 3 minutes.
  3. Meanwhile in a separate bowl mix all dry ingredients then change your whisk to flat beater and add the dry ingredients in the bowl and beat until fully incorporated.
  4. Take a third of the dough and dye it with few drops of blue coloring. Place the rest of the dough in refrigerator.
  5. Roll out the blue dough and place your star of David silhouette on top and cut it out using a knife.
  6. Take the remaining dough from the refrigerator, roll it out in the width and length of your baking paper covering about ¾ of it then divide it to two and using the same silhouette cut out the star in the middle of one side leaving the inner pieces in their place
  7. Replace the cut out star with the blue star adjusting it in it’s place.
  8. Cut stripes in top and bottom of the length and fill them using the remaining blue dough.
  9. Bake for 11 minutes and let the cookie sheets cool down before filling.
  10. Fill with ice cream of your choice, top it with the flag side up and place in freezer until served.
Recipe Notes

Make sure to roll out big pieces on a baking paper so you can move it to the baking sheet by flipping over to avoid breaking it.
