Matcha Green Tea Eclairs

Crisp choux pastry this time in form of eclairs filled with matcha whipped cream and topped with a generous amount of white chocolate glaze dusted with earthy matcha green tea powder dust and a little white chocolate and gold dust detail.

Matcha has a very unique rich taste, bitterness of green tea with sharp vegetal taste and sweetness. I like to pair it with sweet white chocolate to balance the earthiness. The flavour also works beautifully with sweet whipped cream with a little vanilla. If you are new to the flavour, I suggest you add the tea powder in small additions tasting the flavour between additions and adjust the recipe into your liking!

The glaze and how it’s piped on these may look like ganache but it’s shinier and spreads smoothly should you decide to spoon it on and spread using a spatula. Just make sure you work with it while it’s still warm. If you want to make the glaze green, simply add the matcha powder together with milk and corn syrup and it will blend in the mixing.

Ingredients
  • Choux pastry
  • 60 milliliters water
  • 1/4 teaspoon sugar
  • 1/8 teaspoon salt
  • 25 grams unsalted butter
  • 35 grams plain flour
  • 1 egg + 1 for egg glaze
  • Matcha Whipped Cream
  • 150 milliliters cream
  • 30 grams powdered sugar
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon matcha green tea powder
  • White Chocolate Matcha Glaze
  • 55 grams white chocolate
  • 1 tablespoon unsalted butter
  • 1/2 tablespoon milk
  • 1 teaspoon light corn syrup
  • 1/2 teaspoon matcha green tea powder
  • Decorative chocolate detail
  • white chocolate chips
  • edible gold food dust

Instructions
  1. Preheat oven to 180 ºC (356ºF), lightly butter and flour a cookie sheet.
  2. In a small sauce pan heat water, butter, salt and sugar over medium heat until the butter melts.
  3. Remove from heat and whisk in the flour.
  4. Then whisk in the egg and continue whisking until it's smooth and falls of the whisk.
  5. Place in a piping bag fitted with 9mm (0.35inch) round or star piping tip.
  6. Pipe into logs of 10 cm to 12 cm (3.9-4.7inch) onto prepared baking sheet spacing them about 3 cm (1 inch) apart.
  7. For egg glaze, gently beat the egg in a glass with a fork then apply the glaze over the piped choux pastry logs gently brushing using a silicone pastry brush.
  8. Bake for 25-30 minutes until nicely puffed and browned. Lift onto a wire rack and allow to cool.
  9. Once the eclairs have cooled cut them open from the side.
  10. Prepare filling in mixing bowl beating the cream, powdered sugar, vanilla and matcha powder on medium speed until whipped to smooth and thick cream.
  11. Place the whipped cream in a piping bag and fill the eclairs piping the filling in from the side cut.
  12. Place white chocolate and butter in a small sauce pan over medium heat and mix until melted.
  13. Remove from heat and add milk and corn syrup, mix until incorporated and smooth and shiny.
  14. Place in a piping bag with round piping tip and pipe on top of the eclairs. As long as the glaze is warm you can use spatula to smooth it out or pipe in zigzag pattern. Dust with matcha green tea powder.
  15. Place white chocolate chip onto glazing before it sets and add some bling by brushing little gold dust on it!
  16. Serve, enjoy and store in refrigerator.
