Mini Chocolate Cherry Cakes

The cherry season is here! The harvest season has just began and I could not be happier to bake with one of my favourite fruits again.

I created this quick and simple mini cake recipe with a few ingredients, using only spoon measurements.

The chocolate in the cakes is purely from a rich chocolate pudding that makes a great substitute for melted chocolate.

The dark chocolate pudding I used, named YOLO (You Only Live Once) is a new grown-up chocolate pudding in Israel. It’s thick, made from higher percentage of chocolate solids – so chocolately and absolutely divine!

Ingredients
  • Cakes
  • 3 tablespoons dark chocolate pudding
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon soft brown sugar
  • 1 egg
  • 5 tablespoons plain flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 cherries pit and chopped
  • Topping
  • 30 mililiters heavy cream
  • 1 tablespoon powdered sugar
  • 1/4 teaspoon vanilla extract
  • 4 whole cherries

Instructions
  1. Preheat oven to 180°C and prepare two ramekins with paper liners.
  2. In a mixing bowl lightly whisk egg and sugar, then add melted butter.
  3. In a separate bowl or plate combine baking power, salt and flour and add to egg mixture.
  4. Add chocolate pudding and chopped cherries and mix until incorporated.
  5. Spoon the mixture into the prepared ramekins and bake in preheated oven for 25 minutes, until slightly risen.
  6. Remove from ramekins and allow to cool on a wire rack.
  7. Remove paper liners and trim the sides by cutting with a knife or a cookie/cake cutter.
  8. Whip up cream with powdered sugar and vanilla, spoon or pipe over the cakes, top with cherries and serve.
