Mini Chocolate Chip Cookies

Originally I made these cookies for another baking project (that you will later see on the blog), but found they are also adorable in a small glass cookie jar, not to mention a delicious little sweet snack!

Have to admit that this week returning home from the office, I’ve been going straight to the cookie jar and had one or two before walking the dog. 😀

Ingredients
  • 60 grams unsalted butter
  • 80 grams plain flour
  • 1/4 teaspoon baking soda
  • 30 grams sugar
  • 40 grams soft dark brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1 egg
  • 20 grams mini chocolate chips For homemade version - see recipe notes

Instructions
  1. Preheat oven to 175ºC and prepare 2-3 baking sheets with baking paper.
  2. Place butter and the sugars in a mixing bowl and start beating on medium high speed, continue beating until light and fluffy.
  3. Meanwhile in a separate bowl combine flour and baking soda and set aside.
  4. Add eggs, salt and vanilla to the butter-sugar mixture and continue beating for two minutes.
  5. Turn beating on low speed and add the flour mixture, mixing until just combined.
  6. Remove from the mixer and add the mini chocolate chips and gently stir in by using a spatula.
  7. Drop in 3/4 teaspoon sized balls onto baking sheet approximately 2 cm apart.
  8. Bake in preheated oven for 5-8 minutes, until golden brown around the edges.
  9. Allow to cool down on a wire rack. Store in airtight container.
Recipe Notes

Homemade chocolate chips used in these cookies were made with dark chocolate, I used 30g of dark chocolate 60% cacao.

Melt the chocolate.

Place melted chocolate in a piping bag with a small round piping tip.

Pipe small drops over a parchment paper.

Chill in the fridge for at least an hour, pop out from the parchment paper and they are ready to be used in cookies.
