Mint Chocolate Chip Ice Cream

Refreshing mint chocolate chip ice cream is one my favourite ice cream flavours. In Israel despite the enormous variety of flavours, I can rarely find it in local ice cream shops. I am extremely happy to know that I can make it by myself now. 😀

When I came home with a bag of delicious milk chocolate chips from Max Brenner, chocolate by the bald man, I first thought of making chocolate chip cookies but it had been a warm winter day and my mind turned to churning some cream.

The green colour here is from food colouring, but you can be sure that I will do a more natural version in the coming weeks. Meanwhile I did mark the colouring as an optional ingredient as it’s really only for recognising the flavour.

This ice cream is so easy to make, you can make it into beautiful shaped portions using silicone moulds and it’s absolutely delicious.Mint Chocolate Chip Ice Cream

Ingredients
  • 2 egg yolks
  • 35 grams sugar
  • 125 mililiters milk
  • 200 grams cream
  • 1/4 teaspon salt
  • 1/2 teaspoon peppermint flavoring
  • 40 grams milk chocolate chocolate chips
  • 1/4 teaspoon green food coloring optional

Instructions
  1. Place milk, sugar and salt in a sauce pan over medium heat.
  2. In a separate bowl whisk the egg yolks and add 1/3 of the hot liquid mixing continuously.
  3. Combine with the remaining hot liquid and return to heat constantly stirring, remove from heat before the mixture starts to boil.
  4. Refrigerate for one hour.
  5. When the mixture has chilled add cream, peppermint flavouring and drop of green colouring. Mix well.
  6. Pour into ice cream machine and start to churn gradually adding chocolate chips in, a few at time. Churn for about 15 minutes, until desired texture.
  7. Scoop into 4 silicone moulds, and tap flat by using a spoon.
  8. Add some additional chocolate chips on top, cover in cling film and place in a freezer for at least 2 hours.
  9. Turn around on a plate and remove the silicone mould and serve.
