Oat meal & sunflower seed buns

This week I had the honour of preparing a wedding day brunch to one my closest friends. Keeping busy with baking I did not manage to take as many pictures as usually but luckily got some shots of these softies to share with you.

Best served warm with butter, cheese and vegetables.

If your do not have a mixer with a dough hook – you can knead by hand in a mixing bowl until it’s no longer sticking. It takes a bit longer but does not make a difference in the consistence, you’ll still get nice and soft buns.

Ingredients
  • 450 mililiters milk luke warm
  • 30 grams fresh baker yeast
  • 1 1/2 teaspoon sugar
  • 2 teaspoon salt
  • 300 grams oat flakes
  • 430 grams plain flour
  • 25 grams sunflower seeds
  • 50 grams unsalted butter melted

Instructions
  1. In a mixing bowl dissolve yeast in warm milk and add sugar, oat flakes, leave to stand for about 15 minutes, until bubbly.
  2. In separate bowl combine flour, salt and sunflower seeds.
  3. Gradually add the flour mixture to the milk mixture, while kneading on medium speed, until it comes off the bowl.
  4. Turn on to a lightly floured surface, roll into a long piece.
  5. Divide into 15 pieces and roll into shape of a ball.
  6. Place on a baking sheet, cover with cling film and leave to rise for 40-50 minutes.
  7. Preheat oven to 225°C.
  8. Sprinkle with sunflower seeds, and bake in preheated oven for 10-12 minutes.
  9. Let the buns cool down for few minutes and serve warm.
