Onion & Feta Cheese Souffle

Two weeks ago I made my first savory souffle and both my husband and I loved it, so I could not wait longer to make another one. 😀

Compared to the 4 cheese souffle, I used more cheese in this one and the texture is different because of the onion and chive and the feta crumbles melt giving the whole souffle slightly saltier flavor.

Cheese souffle is an excellent dish for brunch, or served with salad for lunch or dinner. We had this on it’s own for dinner followed by fruit salad from my previous post, and it was a great meal!

Ingredients
  • 2 tablespoons unsalted butter
  • 1 tablespoon whole wheat flour
  • 50 grams whipped chive cream cheese
  • 100 mililiters heavy cream
  • 2 eggs seperated
  • 160 grams feta cheese
  • 1 small onion chopped
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon crushed black pepper
  • 20 grams Parmesan cheese grated

Instructions
  1. Preheat oven to 180°C. Prepare two soufflé dishes/ramekins by brushing with soft butter and sprinkle with some parmesan.
  2. In a heavy saucepan melt 1 tablespoon of butter over medium heat, add flour and stir for two minutes. Keep stirring over medium heat and add cream and the chive cream cheese. Bring to boil and remove from heat.
  3. Crack the eggs, placing whites into a clean mixing bowl and whisk the yolks into the sauce. Add crumbled feta, onion and seasoning, then mix well.
  4. Meanwhile in a mixing bowl, beat egg whites until soft peaks form then combine with the other mixture by gently folding the egg white foam in. Spoon into ramekins and sprinkle with remaining parmesan.
  5. Bake in preheated oven for about 35 minutes, until risen and golden brown.
