Halloween Caramel Apple Cupcakes

I got a special delivery from the US last week that contained some amazing baking supplies, including Wilton icing decorations for Halloween and I couldn’t resist making a special recipe for these happy halloween pumpkins 😀 This is not a pumpkin recipe and actually, using grated apple you hardly taste the apple at all. Now I do wish I’d used the apple chopped into small […]

Coconut Flour Pizza Crust

Coconut Flour Pizza Crust

Friday evening pizza post, and I’m continuing my baking experiments with coconut flour. 🙂 For a pizza crust though it stays softer than a wheat based crust, this is definitely my favorite wheat free version so far. The recipe is very simple and by changing the seasoning you can easily adapt it.

Rum Babas & Passion fruit

Rum Babas & Passion fruit

I called the recipe savarin cakes as the dough recipe is adapted from Savarin Dough at Meilleur Du Chef.com. However the fact that I baked them in small cake molds instead of a single large cake mold, makes them Babas, after all. 🙂 Compared to my previous rum babas the dough was slightly more dense and soaked up all the liquid leaving center more moist than the […]

Coconut & Pineapple Ice Cream

Coconut & Pineapple Ice Cream

For us, the ice cream machine has been one of those kitchen appliances that you think you’ll use all the time, but after first couple tries, it’s hardly ever used and is just taking up your closet space. Time to change that and what better than stepping homemade ice cream a level up using the secret ingredient of smooth and creamy ice cream. And guess what? It’s egg […]

Following yesterday’s post today’s baking music is Paula Abdul’s new music video Check Yourself, in honor of breast cancer awareness month.

Pink Dark Chocolate & Hazelnut Macarons

October is breast cancer awareness month and taking on wear pink challenge this post is all about pink. These pink ribbon and heart macarons are made with love to express my moral support for women with breast cancer. This time the macaron shells have no added flavoring, otherwise the recipe is same as here. I was lucky to find Finnish Geisha chocolates in a local store and used […]

Pumpkin Oreo Pops

Pumpkin Oreo Pops

Halloween is almost upon us and pumpkins keep popping up everywhere… well at least in pictures, if you are not in a country where Halloween is celebrated. While I have only ever used pumpkin in soups, I keep dreaming of pumpkin spice latte and hope this year I’ll finally manage to make a pumpkin pie. This time I visited the theme only by dressing some Oreos into […]

Onion & Feta Cheese Souffle
Savoury, Souffle

Onion & Feta Cheese Souffle

Two weeks ago I made my first savory souffle and both my husband and I loved it, so I could not wait longer to make another one. 😀 Compared to the 4 cheese souffle, I used more cheese in this one and the texture is different because of the onion and chive and the feta crumbles melt giving the whole souffle slightly saltier flavor. Cheese souffle is […]

Dark Chocolate & Coconut Dessert Bowls

Dark Chocolate & Coconut Dessert Bowls

A very simple way of making impressive, delicious bowls for desserts, such as this fruit salad made of dragon fruits, apple, pineapple and orange, with some coconut flakes sprinkled on top. I chilled the cups for about an hour and we had to eat them quick as they started to melt in hand, thus I recommend refrigerating a bit longer before serving.

Grain-free Flatbread

Grain-free Flatbread

I only recently discovered coconut flour which unlike I thought is not same as ground coconut. It’s produced from dried coconut meat, a byproduct of coconut milk production. Baking with coconut flour is more challenging as it is super absorbent, also reading online I found that you need to increase number of eggs compared to what you would use with grain based flours. The taste of coconut […]

Pomegranate Macarons

Pomegranate Macarons

A more visual post this time, macarons shells recipe same as in my red grapefruit macarons, just substitute grapefruit with pomegranate juice and use red food coloring. For filling I used pomegranate buttercream (recipe in end of this post) and one single pomegranate seed in each as an juicy surprise in the middle.

Apple & Mascarpone Boston Cake

Apple & Mascarpone Boston Cake

I really don’t know why it’s called Boston Cake and after a brief search failed to find some history online. Anyway what I do know, is that in Scandinavia cinnamon buns baked in a cake tin are called Boston Cake or Bostoncake. You bake it with as many buns as many people you want to serve, so everyone gets their own bun. It’s often served with […]

Crunchy Oat, Almond, Cashew and Blueberry Bars

Crunchy Oat, Almond, Cashew and Blueberry Bars

I’ve recently started eating nut and muesli bars every now then and often find store-bought bars too sweet. So my attempts here were not too sweet yet yummy bars. I did not get as even sized bars as I hoped but the flavor and texture came out nice. Whole dried blueberries are a nice addition in otherwise nutty bars.
