Passion Fruit Emoticon Macarons

Many things can go wrong when making macarons, and even when you have proven your recipe and know the technique, something can go wrong with these pretties.

And that’s what happened to me last weekend while baking these yellow fellows. I wanted to flavour the shells with passion fruit and even made two different batches using passion fruit flavouring but they did not come out right.

Baking with love.

As a result I got 2 jars full of yellow passion fruit flavoured almond meringue cookies that are tasty but they aren’t proper macarons.

So the third and final batch has no flavouring in the shells, other than a drop of passion fruit “glue” used to attach the hearts, however thanks to the fruity passion fruit white chocolate filling they are full of flavour!

These yellow faced emoticons are used to express feelings and what better pick for valentine’s than the smiling face with heart shaped eyes and a face throwing a kiss. 😉

Ingredients
  • Macaron Shells
  • 80 grams egg whites divided
  • 100 grams sugar
  • 25 mililiters water
  • 100 grams powdered sugar
  • 100 grams ground almonds
  • 1/2 teaspoon gel food coloring yellow
  • White Chocolate Passion Fruit Ganache
  • 100 grams white chocolate
  • 40 mililiters cream
  • 1 teaspoon natural passion fruit flavouring
  • 1/2 passion fruits pulp
  • For emoji faces
  • 1 edible color marker black
  • 75 heart shaped sugar sprinkles red
  • 1 tablespoon powdered sugar
  • 2-3 drops natural passion fruit flavouring

Instructions
  1. Preheat oven to 160ºC and prepare 2-3 baking sheets with baking paper or silicone macaron baking sheets.
  2. Place 40g of egg whites in mixing bowl and start mixing on medium high speed.
  3. Place the granulated sugar and water in a pot and put it on the stove on medium heat, once it starts boiling let boil for a minute and remove from heat.
  4. Slowly pour to the egg white foam continuing to mix on medium high speed.
  5. Turn whisking on high speed and continue whisking for about 5 minutes, then add yellow food colouring and continue beating until you get stiff and glossy peaks.
  6. Meanwhile mix almond flour, powdered sugar until fully incorporated, then add remaining egg whites and mix well.
  7. Combine the mixtures by gently folding with a spatula or big spoon.
  8. Pipe the macaron shells onto the baking sheet.
  9. Tap the baking sheet few times to get rid of possible air bubbles and bake in preheated oven for 15-17 minutes and leave to cool down.
  10. Line the cooled shells for decorating and filling. To start from face throwing a kiss, start by drawing the eyes with edible marker, followed by brows and blowing mouth.
  11. For smiling face with heart shaped eyes, use marker to draw a smiling mouth and fill with colour. (I used black but you could do this with brown too)
  12. To make your "glue" for attaching the hearts, mix passion fruit flavouring in powdered sugar until it makes a thick paste like mixture. By using a toothpick tap little dots of the mixture and place hearts on top.
  13. Place white chocolate cubes in a small bowl or plate to prepare the ganache.
  14. Heat the cream over medium heat until it starts to boil , then remove from heat and pour over chopped white chocolate, add passion fruit flavouring and mix until the chocolate has completely melted and the texture is smooth.
  15. Pipe the ganache as a circle on flat side of non decorated shell, place passion fruit seed & pulp over the ganache.
  16. Top with a emoji shell to form a sandwich.
