Passion Fruit Meringue KissesSometimes the real beauty of dessert is in it’s simplicity, isn’t it?

While fruits are beautiful and delicious choice on their own, they can also be a great inspiration of color and flavour for dessert.

Passion fruit/purple granadilla is intensely flavoured with it’s juicy, slightly sour pulp and crunchy seeds. Even the colors are intense, from it’s inedible purple shell to dark yellow pulp with black seeds. I wanted to bring every aspect of the fruit into these sweet meringue kisses and they really create an explosion of flavor and texture when enjoyed together with the fresh fruit.

Ingredients
  • 90 grams egg whites
  • 180 grams powdered sugar sifted
  • 3/4 teaspoon natural passion fruit flavouring
  • 1/2 teaspoon yellow food coloring gel
  • 1/4 teaspoon purple food coloring gel

Instructions
  1. Preheat oven to 110°C (212°F) and line two baking sheets with parchment paper.
  2. In a mixing bowl beat the egg whites until white and foamy.
  3. Add icing sugar in small amounts while continuing to beat on high speed.
  4. Add passion fruit flavoring and a drop of yellow food coloring and continue to beat until smooth and shiny. The meringue is ready when it's stiff enough to stay in place when you turn the bowl upside down.
  5. Prepare a piping bag with large round piping tip and add food coloring in stripes inside the bag before filling with the meringue.
  6. Attach the parchment paper onto the baking sheets with dots of meringue and pipe the kisses on to the sheets.
  7. Bake in preheated oven for 30 minutes, then turn the oven off and open the door a little with use of wooden spoon or tea towel and leave the meringue kisses in to dry completely while the oven is cooling off.
  8. Serve cooled on their own, with fresh passion fruit or ice cream.

Meringue kisses are adorable sweet confections and they work wonderfully with many other desserts, from cakes to ice cream and even jellies, bringing surprising detail with it’s light, crunchy texture. Meringue really is just egg whites and sugar and you can create amazing color combinations on the pale white base.
