Passion Fruit Yogurt Tart

FRUITY and BRIGHT, refreshing passion fruit yogurt tart. The name says it all, it’s a delightful tart with a quick and easy to work with – cream cheese crust. I did not want to make it too heavy and thus used greek yogurt in the filling, that by the way pairs very well with the sweet tart flavour of passion fruit/purple granadilla! The inspiration for the tart was actually born from my afternoon yogurt & fruit snack 😀

There is a good amount of vanilla in the recipe and it works as flavour enhancer rather than flavouring in this one. Passion fruit with it’s tropical, sweet tart flavour controls the taste of this tart. The cream cheese crust has very mild taste on it’s own and works well with the refreshing yogurt filling. The recipe isn’t sugar free by any means, but it’s not too sweet (you’ll easily go for a second piece on this one!) Passion Fruit Yogurt Tart

Ingredients
  • Cream Cheese Crust
  • 200 grams Philadelphia cream cheese at room temperature
  • 60 grams unslated butter cut into cubes
  • 180 grams all purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons cold water
  • No Bake - Passion Fruit Filling
  • 30 milliliters water
  • 3 teaspoons gelatin powder
  • 260 grams greek yogurt
  • 240 milliliters cream
  • 1/2 teaspoon vanilla bean seeds
  • 60 grams sugar
  • 120 grams passion fruit pulp and juice

Instructions
  1. Preheat oven to 180°C (356°F) and prepare a 28 cm (11 inch) tart pan.
  2. Place crust ingredients apart from water into a mixing bowl with flat beater attachment and beat on low speed.
  3. Mix until crumbly then add water and increase speed to medium mixing until incorporated and smooth.
  4. Remove from mixer and roll out on lightly floured surface to about 3mm (0.11inch) thick and place on the tart pan.
  5. Shape onto the pan trimming the overhang sides
  6. Place in oven with pie weight* on top baking for 8 minutes, then remove the weight and continue baking for another 8-10 minutes until baked throughly and golden brown.
  7. Lift onto a wire rack and allow to cool down.
  8. Prepare for filling by measuring all ingredients.
  9. Mix gelatine with water and set aside.
  10. In a small sauce pan heat sugar, cream and vanilla on medium heat until it starts to boil.
  11. Remove from heat and mix in the set gelatine stirring until dissolved in the hot cream.
  12. Allow the mixture to cool to touch until mixing with the yogurt and 2/3 of the passion fruit.
  13. Pour the filling into cooled crust, place couple extra spoonfuls of passion fruit on top and spread with a spoon.
  14. Refrigerate for 2-3 hours and place on a serving plate.
  15. Pour the remaining passion fruit on top and serve chilled.

* I used another pie pan covered in aluminium foil as the pie weight.
