Quick and easy cake for Passover, made with matzo meal.
Ingredients
- 50 grams organic coconut oil
- 150 grams soft brown sugar
- 40 grams cocoa powder
- 2 eggs
- 1 teaspoon vanilla
- 200 grams matzo meal
- 150 grams pecan nuts divided

- Preheat oven to 175ÂșC, lightly grease a 20cm cake tin using coconut oil and dust it with some cocoa powder.
- Place the coconut oil and soft brown sugar in a mixing bowl and beat on medium-high speed for 3 minutes.
- Add the eggs and vanilla and continue beating for another 3 minutes. In a separate bowl combine matzo meal and cocoa powder and mix well.
- Combine the two mixtures and mix until fully incorporated. Sprinkle 100g of chopped pecans on the bottom of your cake tin and pour the cake batter on top, spread to the edges.
- Bake for 20 minutes and serve warm topped with sugared pecans.
