Cookies Cookies, Peanut & Goji Berry Cookies! If you are following my Instagram and moreover my recent Instagram Stories, you know I’ve been on a cookie quest for the past week. I’ve been practicing making cookies we learned at class as well as working on some new recipes. And here’s a new one – texture wise it reminds of chocolate chip cookies but it’s slightly chewier and has lovely crunch from the peanuts. The tanginess of the goji berries gives the cookies a nice savoury taste inside the sweet cookie. Peanut & Goji Berry Cookies

I used salted unshelled peanuts but the salt gets mixed in the batter and the peanuts in baked cookies taste more like natural unsalted peanuts. Thus I’ve simply listed ‘peanuts’ as the ingredients, leaving you the freedom to pick peanuts of your choice. Okay let’s not go NUTS over peanuts – like according to my husband I tend to do! He just told me today that he has never met anyone as passionate about peanuts like I am! Well I do love them but to put the statement in context – I was trying to convince him that the local company has changed the way they prepare their “fried peanuts” as they’ve suddenly got much darker and less salty, while for him (naturally) they were the same nuts!

Ingredients
  • 100 grams unsalted butter
  • 90 grams sugar
  • 45 grams soft dark brown sugar
  • 1 egg
  • 160 grams all purpose flour sifted
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 100 grams peanuts
  • 55 grams goji berries dried

Instructions
  1. In a mixing bowl combine butter and sugars and using a flat beater mix on medium speed until smooth.
  2. Add egg and vanilla extract and continue to beat until incorporated.
  3. Turn the mixer speed to low and add sifted flour, salt and baking soda.
  4. Once incorporated and smooth add the peanuts and goji berries and mix.
  5. Cover the bowl with plastic wrap and place in refrigerator for at least 45 minutes.
  6. Preheat oven to 160°C (320°F) and prepare a baking sheet with parchment paper.
  7. Divide the chilled cookie batter into 12 chunks and roll into balls, placing them on the prepared baking sheet 5 cm/2 inch apart.
  8. Bake in preheated oven for 12-15 minutes until flattened and nicely browned.
  9. Allow to cool before serving. Enjoy!
