Pecan Pie

Pecan Pie I made this yummy pecan pie for my first Thanksgiving dinner with friends last week.

Late post for Thanksgiving but a warm pecan pie makes a great winter dessert, and who knows maybe I make it to our family’s Christmas dinner this year.

Serve warm, on it’s own, with vanilla ice cream or whipped cream. Enjoy!

Ingredients
  • Crust
  • 100 grams unsalted butter cut into cubes
  • 225 grams plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 4 tablespoons ice water
  • Filling
  • 220 mililiters light corn syrup
  • 150 grams dark brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter melted
  • 250 grams pecan nuts divided: 50 grams crushed, 100 grams quartered and 100 grams halves

Instructions
preparing the crust
  1. In a mixing bowl combine flour, baking powder and sugar.
  2. Cut the butter into the flour mixture using your fingers, until resembles crumbs.
  3. Gradually add the ice water and mix until forms a dough.
  4. On a lightly floured surface roll out into a circle, about 2 cm bigger than the pie dish.
  5. Shape into a pie dish.
  6. Cover with cling film and refrigerate for one hour.
Filling and baking
  1. Preheat oven to 200°C, take the pie crust from refrigerator and brick small holes in the bottom using a fork.
  2. Place sugar and corn syrup in a saucepan and bring to boil over medium high heat.
  3. Let syrup boil for 2 minutes, then allow to cool for a minute.
  4. Lightly beat the eggs and add the syrup, while continuously whisking.
  5. Add butter, vanilla, salt and crushed pecans.
  6. Arrange quartered pecans over the crust.
  7. Pour the syrup mixture on top of the quartered pecans.
  8. Arrange pecan halves on top.
  9. Cover with aluminium foil and bake 1/2 hour, then remove the aluminium foil and bake for another 1/2 hour, until firm in the middle.
