Peppermint Pavlova with strawberries and chocolate! I chose piping the meringue into disks for individual desserts, but it works as in a pavlova cake or any other shape. My meringue got a bit runny as I slipped a little too much of liquid when adding the flavouring which gave them a more distinctive peppermint flavour and it worked well in the shape I wanted them, which almost resamples of large macaron! The strength of peppermint flavouring vary between brands and you should add it according to your taste, I do not recommend tasting raw meringue but you should be able to detect the peppermint in the smell.

Ingredients
  • Peppermint meringue
  • 85 grams egg whites
  • 170 grams powdered sugar
  • 1/3 tsp organic peppermint flavoring
  • 1/4 tsp red food colouring gel
  • Whipped Cream
  • 150 grams heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla bean paste
  • Topping
  • fresh strawberries hulled and halved
  • candy canes chopped or halved
  • cacao nibs or shaved chocolate
  • Fazer Marianne Crush crushed chocolate filled mint candies

Instructions
  1. Preheat oven to 110°C (212°F) and a baking sheet with parchment paper.
  2. In a mixing bowl beat the egg whites until white and foamy.
  3. Add icing sugar in small amounts while continuing to beat on medium high speed.
  4. Add peppermint flavouring and continue to beat until smooth and shiny. The meringue is ready when it's stiff enough to stay in place when you turn the bowl upside down.
  5. Prepare a piping bag with large round piping tip and add red food colouring in stripes inside the bag before filling with the meringue.
  6. Attach the parchment paper onto the baking sheets with dots of meringue and pipe the meringue on the sheet in shapes of your choice.
  7. Bake in preheated oven for 1 hour then turn the oven off and let the meringue to cool completely inside the oven.
  8. When the meringue has cooled whip the cream with icing sugar and vanilla for taste and place in piping bag with a large star tip.
  9. Plate the pavlova piping the cream on top with some strawberries and decorate with cacao nibs, shaved chocolate, candy cane and crushed chocolate filled mint candies.
  10. Serve and enjoy!
