A more visual post this time, macarons shells recipe same as in my red grapefruit macarons, just substitute grapefruit with pomegranate juice and use red food coloring.

For filling I used pomegranate buttercream (recipe in end of this post) and one single pomegranate seed in each as an juicy surprise in the middle.

Ingredients
  • 100 grams unsalted butter at room temperature
  • 5 tablespoons fresh pomegranate juice
  • 300 grams powdered sugar sifted

Instructions
  1. Place butter in a mixing bowl, add two tablespoons of pomegranate juice and 100 grams powdered sugar and beat on medium low speed gradually increasing speed to medium high, beat for two minutes.
  2. Add remaining powdered sugar and pomegranate juice and beat until smooth and fluffy.
