Pop Pop Poppy Seed Parmesan Bagels! They are soft inside, have solid chewy crust and crispy bottom – pretty much the definition of a perfect bagel, right?

Parmesan with it’s sharp, complex taste brings flavour and they get nice texture from poppy seeds.

These cheesy bagels are delicious on their own when eaten warm, or cut them open and use your favourite fillings.

Ingredients
  • Bagels
  • 2 teaspoon dry active yeast
  • 200 mililiters water lukewarm
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 150 grams whole wheat flour
  • 150 grams plain flour
  • 1 egg
  • 4 tablespoons poppy seeds + extra for sprinkling on top
  • 150 grams Parmesan cheese divided
  • 20 militers olive oil
  • For boiling
  • 1,5 litre water
  • 1 tablespoon sugar

Instructions
  1. Place yeast and sugar in a mixing bowl and pour over warm water, leave it for 5 minutes until the mixture becomes frothy.
  2. Add salt and egg and mix well then sift in half of the flours and continuing the mix by using a flat beater.
  3. Add poppy seeds and approximately 120g grated parmesan and mix.
  4. Change flat beater to dough hook and gradually add the remaining flour, kneading until smooth and elastic.
  5. Place the dough in a oiled bowl and leave in warm to rise for one hour.
  6. Preheat oven to 250°C and prepare a baking sheet with baking paper.
  7. Knead the dough again and divide it into 6 pieces and shape into a ball.
  8. Make a hole in the middle of each ball using a wooden spoon or with your index finger spinning around to make a hole about 2 cm wide, cover with a kitchen towel.
  9. Meanwhile bring water to boil and add sugar. Slip the bagels in the boiling water 2 at time. Cook for about 2 minutes turning the bagels around in the water once a skin has formed.
  10. Place on baking sheet and sprinkle some poppy seeds and parmesan on top.
  11. Bake for about 20 minutes. Let them cool down for few minutes then serve warm.
