Quick Chocolate Cake
Light and airy CHOCOLATE CAKE from scratch to table in 45 minutes! Okay, it’s not as speedy as a microwave cake but it’s a quick oven baked cake with light texture. It’s made from basic ingredients that can be found in any pantry.

I’ve made the cake dairy free by using margarine in the recipe, you can go ahead and substitute it with oil or butter, the minor changes in flavour, texture and height should not change the fact that it’s a really nice, simple chocolate cake!

I’m off to Finland later today, to see my family and friends and enjoy the crisp autumn weather! I am sure I will be gathering lot’s of inspiration from the trip and sure I will be tasting some wonderful treats while there. Ingredients
  • 150 grams sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 150 grams margarine
  • 125 grams all purpose flour
  • 27 grams cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon powdered sugar for dusting

Instructions
  1. Preheat oven to 200ºC (395ºF) and lightly grease and flour a 20 cm (8 inch) cake pan.
  2. Melt the margarine in small sauce pan over medium heat or in intervals in microwave and set aside to cool.
  3. Place eggs, sugar and vanilla extract in a mixing bowl and beat on medium speed until pale and foamy.
  4. In a separate bowl combine flour, cocoa powder, baking powder, baking soda and salt and sift the mixture.
  5. Add cooled, melted margarine into the egg foam while beating on medium speed, until incorporated.
  6. Finally add the sifted flour mixture and beat only until incorporated and smooth.
  7. Pour into prepared cake pan and bake in preheated oven for 20-25 minutes.
  8. Allow to cool a bit before removing from the pan, then dust with powdered sugar and serve - it's delicious with a dollop of whipped cream!
