BIP 1 Month & Red Grapefruit Polka Dot Cake

A month ago I made the first BIP post with Pink Polka Dot Lemon Cake promising myself next one would continue polka dots in decorations. Here it is!

The dots inside the cake did not work out as well as they did the other way around, though taste wise it works  – Love the grapefruit  flavour!

Ingredients
  • Grapefruit Cake Balls
  • 50 grams granulated sugar
  • 50 grams unsalted butter
  • 1 egg
  • 50 grams self rising flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons potato flour
  • 1 tablespoon grapefruit juice
  • Red Grapefruit Cake
  • 100 grams unsalted butter
  • 200 grams caster sugar
  • 2 eggs
  • 150 grams self rising flour
  • 120 grams plain flour
  • 80 mililiters milk
  • 2 tablespoons sour cream
  • 2 tablespoons red grapefruit juice
  • 1 tablespoon grapefruit zest
  • 1 teaspoon pink food coloring
  • Frosting & Decorating
  • 220 grams Philadelphia cream cheese
  • 100 grams powdered sugar
  • 1 tablespoon red grapefruit juice
  • 2 tablespoons red grapefruit pulp
  • Pink sugarpaste/fondant
  • White sugarpaste/fondant
  • 1/8 teaspoon concentrated lemon juice
  • 2 teaspoons powdered sugar

Grapefruit Cake Balls
  1. Preheat oven to 160ºC.
  2. Beat butter and sugar until pale and fluffy then add egg and beat for 3 minutes
  3. Meanwhile mix baking powder, potato flour and self raising flour in a bowl.
  4. Fold the flours into the batter and mix the grapefruit juice in whisking for a minute.
  5. Pour the batter into cake pop pan and bake for 18-20 minutes , until a toothpick inserted from the hole all the way through comes out clean
  6. Let the cake balls cool down before removing from the silicon pan gently pushing them out one by one
Red Grapefruit Cake
  1. Preheat oven to 160ºC. Grease and flour a 20cm cake pan.
  2. Beat butter and sugar until pale and fluffy and then add eggs one at time beating for 3 minutes after each egg.
  3. Mix flours together and in a separate bowl/jar mix red grapefruit juice, zest, sour cream and pink food colouring into the milk.
  4. Beating on low speed add the flours and milk into the batter in three steps mixing for a minute after each step.
  5. Place a few cake balls in the bottom and pour batter over them, then place rest of the cake balls and cover them in the batter.
  6. Bake 30-35 minutes until a toothpick inserted from the middle comes out clean. Let the cake cool down completely before cutting.
Frosting and assembling the cake
  1. Place the cream cheese, powdered sugar and red grapefruit juice in your mixing bowl and start beating on low speed gradually increasing to high speed.
  2. Using a cake leveller or a knife cut the cake into two layers. If needed straighten the top part by cutting uneven sliced off.
  3. Fill the cake with 2/3 of the cream cheese frosting and place the red grapefruit pulps on top of the frosting and apply your second cake layer on top.
  4. Use the remaining frosting to crump coat the cake. Then roll out pink sugarpaste /fondant to one big thin layer to cover the whole cake and place it on top of the cake, cut extras from the sides. You can roll out a long piece to seal the ends, makes nice finish especially if the sides fell short at places.
  5. Roll out some white sugarpaste and cut out circles with diameter about 1.5 cm. Depending on the distance you want between the dots you need 20-30 circles.
  6. Mix a drop of lemon juice in powdered sugar and use the mix as a glue to apply your dots on the top.
  7. Serve right away or chill and serve.
Recipe Notes

Toothpicks are great for marking the dots in order to place the levels the same way back when filled.
