Frittata is a wonderful dish, you can make one quick and simple with almost anything as long as you got eggs to cover it all to keep your crustless quiche together.
Making a frittata can also be a great way of using dinner leftovers especially potatoes, rice and pasta. And why not meat as well? I guess you could do a nice bacon and eggs breakfast this way too!
This frittata was my test version for a bigger one I’ll be making for a special brunch later this week. I was also testing using a disposable aluminium foil pan and came out absolutely great.
This recipe uses fresh potatoes, for leftover potatoes you should skip the cooking and add straight to pan.Matured cheddar is not the easiest to grate but bigger chunks are fine too.Adding additional salt in the eggs may result in over all flavour becoming too salty, you could add pinch of black pepper instead.

Ingredients
4eggs
1red onionsliced
3small potatoesdiced
1tablespoonolive oil
1garlic clove
1/2teaspoonherbal salt
1teaspoonoregano
1/2teaspoonground cumin
100gramscheddar cheesegrated

Instructions
Preheat oven to 225°C, in broil/grill setting.
Wash and dice the potatoes, then cook for 5 minutes.
Heat the oil in a pan over medium heat, add onion and garlic and sauté until soft.
Add the potatoes in the pan and season with herbal salt, oregano and cumin, continue frying in the pan for 5 minutes stirring occasionally.
Pour into a baking dish ( if you are using a oven-safe pan ignore this step)
Sprinkle with grated cheddar and pour lightly beaten eggs on top.
Bake on the top rack in your oven for 7-10 minutes, until desired consistency/colour.
Cut into slices and serve with salad/ garnish
