This is the only sugar containing recipe I will be posting in August, but don’t worry it’s still going to be a sweet month!

I may be posting less frequently in the coming couple of weeks as the summer heat is forcing me to slow down a bit but I got lots of ideas and will continue to work on new baking inspiration for the months to come.

So salted caramel with passion fruit in tiny chocolate cups? Yes, might sound like a strange combination but if you like salty caramel and tart  fresh passion fruit, you will love this combination together with bittersweet dark chocolate.

Ingredients
  • Dark Chocolate Cups
  • 75 grams dark chocolate melted
  • Salted Caramel with passion fruit
  • 50 grams sugar
  • 1/2 tablespoon honey
  • 30 mililiters cream
  • 40 grams butter
  • 1/2 teaspoon sea salt
  • 2 tablespoons passion fruit pulp
  • Garnish
  • sea salt
  • passion fruit pulp

Instructions
Chocolate Cups
  1. Melt the chocolate and by using a spoon brush a cake pop mould or mini cupcake mould with a layer of melted chocolate and allow to set.
  2. Add another layer of chocolate and chill in refrigerator for an hour.
Salted Caramel
  1. prepare all your ingredients and utensils, placing sugar in a heavy saucepan.
  2. Melt sugar over medium heat and add honey, cook until light amber colour.
  3. Slowly stirring add in the cream and allow to boil for 2 minutes.
  4. Remove from heat, add butter and salt and mix well. Allow to cool a bit before mixing in the passion fruit.
Filling & finishing
  1. Gently remove the chilled set chocolate cups from the mould and place on serving plate.
  2. Fill with a spoonful of caramel
  3. Place some extra passion fruit pulp and salt bits on top.
  4. Chill for an hour, serve and enjoy!
