Soft peanut butter cookies

Cookie-licious Monday with chunky soft peanut butter cookies.

Actually I made them for Sunday but with the sugar content they did not qualify for Sugar Free Sunday post ( I know I missed some recently but will try to bring them ASAP).

Sometimes you just have to treat yourself to a real cookie and if you are a fan of peanut butter, you will love these cookies!

For variation throw some chocolate chips or crushed peanuts in the batter. You can also make them into smaller/thinner cookies and the batter will be enough for nearly a hundred cookies.

Needless to say, these cookies are delicious served warm with glass of cold milk.

Ingredients
  • 200 grams smooth peanut butter
  • 100 grams unsalted butter
  • 100 grams dark brown sugar
  • 100 grams white sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 330 grams plain flour

Instructions
  1. Preheat oven to 180°C and prepare two baking sheets with baking paper.
  2. In a mixing bowl cream peanut butter, butter and sugars mixing on medium high speed.
  3. Add vanilla and eggs one at time and continue mixing.
  4. In a separate bowl mix flour with baking powder and baking soda.
  5. Sift the flour mixture in and mix until smooth and combined.
  6. Roll into balls and place onto baking sheet 3 cm apart and sprinkle little sugar on top.
  7. Flatten the balls using a cookie stamp or with a fork.
  8. Bake in preheated oven for 6-7 minutes, allow to cool a bit and lift onto wire rack. Serve warm or cooled.
