Spiced cinnamon cupcakes with pineapple cream cheese frosting

Cinnamon is typically associated with fall and winter seasons and here I am in middle of the warm Israeli summer baking spiced cinnamon cupcakes – but guess what! With pineapple cream cheese it’s a perfect summer treat.

You got to eat them chilled as cream cheese frosting does’t do well in the heat… Well this was kind of a small batch and they were all gone within an hour I think.

I gave one to my friend just before she got to her office in the morning and shortly after received a message from her telling she’d enjoyed it with her morning Earl Grey and felt like she was having a mini tea party at work, how sweet is that?Spiced cinnamon cupcakes with pineapple cream cheese frosting

Ingredients
  • Spiced Cinnamon Cupcakes
  • 100 grams unsalted butter
  • 40 grams light brown sugar
  • 40 grams soft dark brown sugar
  • 1 egg
  • 70 mililiters milk
  • 150 grams plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 3/4 teaspoon crushed cardamom seeds
  • 1/6 teaspoon salt
  • Pineapple Cream Cheese Frosting
  • 60 grams Philadelphia cream cheese softened
  • 10 grams unsalted butter softened
  • 1 tablespoon crushed pineapple
  • 100 grams powdered sugar
  • Toppings
  • pineapple chunks
  • ground cinnamon

Spiced Cinnamon Cupcakes
  1. Preheat oven to 160ºC and line a muffin tray with 9 cupcake cases.
  2. In a mixing bowl beat butter and sugar on medium high speed for 3-5 minutes, until smooth. Then add the egg and continue beating.
  3. In a separate bowl combine the flour, baking powder, baking soda, cinnamon and rest of the spices and salt.
  4. Sift the flour mixture into the creamed mixture, add milk and beat just until incorporated.
  5. Place into a piping bag and pipe or spoon into cupcake cases filling them about 2/3 full.
  6. Bake in preheated oven for 20-25 minutes, until a toothpick inserted in middle comes our clean.
  7. Place on wire rack and allow to cool before frosting.
Pineapple Cream Cheese Frosting
  1. Place softened butter, cream and crushed pineapple in a mixing bowl and beat on medium speed until incorporated and smooth.
  2. Sieve in half of the powdered sugar and continue beating until smooth. Repeat and mix in remaining powdered sugar.
  3. Place in a piping bag and pipe over cooled cupcakes.
  4. Decorate with pineapple chunks and sprinkle cinnamon on top. Keep refrigerated until serving.
