Star Crust Cheesecake Apple Pie

Perfect pie for hot summer days! Cheesecake apple pie with a star crust is also a fitting dessert for Fourth of July celebrations.

The pie has a rich creamy cheesecake layer topped with sweetened apple and fresh pear slices spiced with cinnamon and nutmeg.

The soft shortcrust pastry I made for this pie is made in a mixer using flat paddle attachment and most important thing in making this pastry is that your butter is cold. I also like to refrigerate the mixing bowl to make sure the butter won’t start melting and will hold the texture. As you can see from the picture in step 3. the texture is rather crumbly.

You can enjoy this pie on it’s own or add sweetness and pour some caramel sauce on top. Even a salted caramel sauce would pair well with the flavours.

Ingredients
  • Soft Short Crust
  • 300 grams plain flour
  • 200 grams unsalted butter
  • 2 egg yolks
  • 2 tablespoons milk warm
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon sugar
  • Cheesecake filling
  • 225 grams Philadelphia cream cheese softened
  • 1 egg
  • 25 grams sugar
  • 1 teaspoon vanilla extract
  • Apple pie filing
  • 4 green apples peeled, cored and sliced
  • 2 pears peeled, cored and sliced
  • 1 tablespoon soft brown sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon white granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Glazing
  • 1 egg
  • 1 tablespoon water for egg wash
  • 1 tablespoon sugar

Instructions
  1. In a mixing bowl using paddle attachment beat butter on low speed.
  2. Add milk, eggs, salt and sugar and continue beating on low speed until smooth.
  3. Sift in the flour and continue beating till smooth.
  4. Divide into two parts, leaving other part about 1/4 smaller, wrap into clingfilm and refrigerate for 30 minutes.
  5. Meanwhile prepare cheesecake filling, place softened cream cheese, sugar and vanilla in a mixing bowl.
  6. Beat on medium low speed until smooth, place in refrigerator until used.
  7. Peel, core and slice apples and pears into thin slices.
  8. Mix lemon juice, sugar and spices in a bowl and toss the apple and pear slices in gently mixing until all covered.
  9. Preheat oven to 180° and prepare a pie dish.
  10. On a lightly floured surface roll out the bigger piece of shortcrust dough into a round diameter +4 cm of your pie dish (25cm for 21 cm pie dish) , and spread it evenly over the bottom and up sides of your pie dish.
  11. Pour the cheesecake filling on the bottom and spread evenly.
  12. Roll out the second piece of shortcrust pastry and by using a small star cookie cutter cut out star approximately 1 cm apart. You can also leave cutting out stars to after placing the crust over the pie.
  13. Place the apple and pear slices on top of the cheesecake mixture and gently add star crust on top, tucking the edge under the bottom crust and refrigerate for 15 minutes
  14. Use the cut out stars covering the edges, brush with egg wash and sprinkle sugar on top.
  15. Bake in preheated oven for 50 minutes or until golden brown. Allow to cool before serving.
