Strawberry Cream Cake

Keep Calm & Bake a Cake… Layers of whipped cream and fresh strawberries over vanilla and vanilla & strawberry cake.

Generally I’d say this is a summer cake, but whenever you get strawberries at their best is a good time to make this cake. You could cover it in icing but I really like the “naked” look.

Ingredients
  • 2x 20 cm Vanilla Cake
  • 220 grams unsalted butter
  • 220 grams granulated sugar
  • 210 grams self rising flour
  • 30 grams plain flour
  • 1 teaspoon baking powder
  • 4 eggs
  • 2 tablespoon cream
  • 1,5 teaspoon vanilla extract
  • 1x 20 cm Vanilla & Strawberry Cake
  • 200 grams fresh strawberries sliced
  • 100 grams unsalted butter
  • 100 grams white granulated sugar
  • 80 grams self rising flour
  • 40 grams plain flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Filling & Topping
  • 350 mililiters heavy cream
  • 50 grams powdered sugar
  • 1300 grams fresh strawberries chopped/sliced

Vanilla Cakes
  1. Preheat oven to 160ºC and line two 20 cm cake tins with parchment paper, lightly grease and flour.
  2. Place butter and sugar in a mixing bowl and start beating on medium high speed for few minutes.
  3. Add eggs one at time, mixing for a minute in between.
  4. In a separate bowl combine flours and baking powder and add to the egg mixture.
  5. Add cream and vanilla and continue beating for 2 minutes.
  6. Pour into cake tins and bake in preheated oven for about 25 minutes, until a tooth pick inserted in middle comes out clean.
Vanilla & Strawberry Cake
  1. Preheat oven to 160ºC and a 20 cm cake tin with parchment paper, lightly grease and flour.
  2. Place butter and sugar in a mixing bowl and start beating on medium high speed for few minutes.
  3. Add eggs one at time, mixing for a minute in between.
  4. In a separate bowl combine flours and baking powder and add to the egg mixture.
  5. Add vanilla and continue beating for 2 minutes.
  6. Place some sliced strawberries in the bottom of the cake tin.
  7. Mix the rest strawberries in the batter gently folding.
  8. Pour into the cake tin over the strawberries and spread evenly by using a spatula.
  9. Bake in preheated oven for about 25 minutes, until a tooth pick inserted in middle comes out clean.
Filling & assembling the cake
  1. Once the cakes have cooled (you can also prepare them beforehand, freeze and allow to defrost in room temperature before filling) prepare whipped cream by beating with powdered sugar until desired consistency.
  2. Cut and slice strawberries, leaving pretty slices aside for the top. I used a paring knife to shape the slices into heart shapes.
  3. Start assembling the cake by placing 2-3 spoonfuls of cream and 1/3 strawberries on top of vanilla cake.
  4. Add another 2-3 spoons of cream and place second vanilla layer on top, then repeat filling for second layer.
  5. Place the vanilla strawberry cake on top.
  6. Top with few spoonfuls of whipped cream and place the strawberry slices on top.
